I'd heard it on the grapevine that Peking duck is an absolute must when in Beijing. As a true Brit, I had been raised on the crappy takeout stuff which seemed delish at the time. But seriously I probably could have shed a tear the Beijing version is so much better. It hardly counts as the same dish.

Not only is the duck so tender and juicy it’s almost criminal, there’s a bit of a performance involved too. A nice chef came over to our table in his poofy hat, whipped out his knife and did some impressive carving. The only part I didn’t enjoy so much was when he cracked the poor wee duck’s head in half and popped it on a plate about 4 inches away from me. But hey, who can complain when it feels like you’re eating pancakes made by angels.
